GM's train by memorizing multiple lines from several openings, and spend hours and hours on preparation. The reason for the term "chess is dead" lies in this style of memorization and preparation, NOT because engines are more powerful than humans.
To a GM, chess is *not the same* (because it involves hours of preparation and memorization) and thus it can be called "dead" from their perspective since it's not the same game as it was when they (GM's) played in the "Romantic" period (in which extensive theory wasn't known).
